Apricot Oatmeal Bars

These apricot bars are easy, delicate delicious! They even freeze well too.

yields ~50 bars

1½ cups All purpose flour
1½ cups Quick cooking oats
1 cup Brown sugar
¼ teaspoon Baking soda
¾ cup Butter (1½ sticks), cut up
1½ cups Apricot preserves or jam
½ teaspoon   Almond extract (optional)
  1. Put all ingredients, except for preserves, in a large bowl. With a pastry blender (or food processor), cut in the butter until the mixture is crumbly. This step may be done in a food processor with a cutting blade.
  2. Press all but 1 cup of this mixture in a greased 9 by 13 sheet pan (quarter sheet pan) and spread the preserves (mixed with almond extract if desired) on top. Sprinkle the reserved crumbs over the preserves and bake at 375°F for 30-35 minutes. Cool before slicing into bars.
