Enjoy!<\/span><\/span><\/p>\n<p><b>Carrot Cupcakes<\/b><\/p>\n<table>\n<tbody>\n<tr> <\/tr>\n<tr>\n<td>1 cup<\/td>\n<td>All purpose flour<\/td>\n<\/tr>\n<tr><\/tr>\n<tr>\n<td>1 cup<\/td>\n<td>Sugar<\/td>\n<\/tr>\n<tr>\n<td>1 teaspoon<\/td>\n<td>Baking powder<\/td>\n<\/tr>\n<tr>\n<td>\u00bd teaspoon<\/td>\n<td>Cinnamon<\/td>\n<\/tr>\n<tr>\n<td>\u00bc teaspoon<\/td>\n<td>Salt<\/td>\n<\/tr>\n<tr>\n<td>\u00bc teaspoon<\/td>\n<td>Baking soda<\/td>\n<\/tr>\n<tr>\n<td>1\u00bd cups<\/td>\n<td>Finely grated carrot<\/td>\n<\/tr>\n<tr>\n<td>\u2153 cup<\/td>\n<td>Vegetable oil<\/td>\n<\/tr>\n<tr>\n<td>\u00bc cup<\/td>\n<td>Yogurt<\/td>\n<\/tr>\n<tr>\n<td>\u00bd teaspoon<\/td>\n<td>Vanilla extract<\/td>\n<\/tr>\n<tr>\n<td>\u00bd teaspoon<\/td>\n<td>Almond extract (optional)<\/td>\n<\/tr>\n<tr>\n<td>2 large <\/td>\n<td>Eggs<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>1. Line 12-cup muffin pan with cupcake liners.<br \/>2. In a large bowl, stir together flour, sugar, baking powder, cinnamon and salt.<br \/>3. In another bowl, combine carrot, oil, yogurt, extracts and eggs.<br \/>4. Add the wet ingredients to the flour mixture and mix until just blended.<br \/>5. Fill cupcake liners to about \u00be full.<br \/>6. Bake for about 20 minutes at 375\u00baF or until firm and baked through. Toothpick should come out clean when inserted into the center.<\/p>\n<p><b>Cream Cheese Frosting<\/b><\/p>\n<table>\n<tbody>\n<tr>\n<td>4 ounces<\/td>\n<td>Cream cheese, softened<\/td>\n<\/tr>\n<tr>\n<td>4 tablespoons<\/td>\n<td>Butter, softened<\/td>\n<\/tr>\n<tr>\n<td>1 teaspoon<\/td>\n<td>Vanilla extract<\/td>\n<\/tr>\n<tr>\n<td>3 cups<\/td>\n<td>Powdered sugar<\/td>\n<\/tr>\n<tr>\n<td>as needed<\/td>\n<td>Water<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>1. In a mixer bowl, beat together cream cheese and butter until smooth and light. Add vanilla and mix some more.<br \/>2. Add sugar and continue beating until light and fluffy. Add a little water if necessary.<br \/>3. Spread on carrot cupcakes.<\/p>\n<p><b>For Decoration<\/b><br \/>Coconut-Put on the of the icing <br \/>Jelly beans-cut in half for the nose and eyes or left whole for teeth<br \/>Chocolate chips-for the eyes<br \/>Marshmallows-Cut in half, squeeze into ear shape and press the cut side in<br \/>Pink sugar<br \/>Green coconut- makes a nice grassy place to put your bunnies<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Carrot Cupcakes all dressed for Easter!
