Honey Balsamic Squash and TomatoesFreely use this recipe for your enjoyment, but please do not republish.
|2 tablespoons||Olive oil|
|3 cloves||Garlic, peeled|
|1||Yellow squash, halved and sliced|
|To taste||Salt and pepper|
|1 tablespoon||Fresh basil, sliced|
|½ cup||Halved cherry tomatoes|
|1-2 tablespoons||Balsamic vinegar*|
|*Adjust to your personal taste|
- In a large skillet, over medium high heat, carefully cook garlic in hot oil until evenly browned.
- Add squash and and cook until lightly browned on both sides.
- Add salt, pepper, basil and tomatoes and cook until tomatoes soften (just a few minutes).
- Add honey and balsamic vinegar and bring to a simmer. Done!
