Honey Balsamic Squash and Tomatoes

2 tablespoonsOlive oil
3 clovesGarlic, peeled
1 Yellow squash, halved and sliced
To tasteSalt and pepper
1 tablespoon Fresh basil, sliced
½ cup Halved cherry tomatoes
1-2 teaspoonsHoney*
1-2 tablespoons Balsamic vinegar*
*Adjust to your personal taste

  1. In a large skillet, over medium high heat, carefully cook garlic in hot oil until evenly browned.
  2. Add squash and and cook until lightly browned on both sides.
  3. Add salt, pepper, basil and tomatoes and cook until tomatoes soften (just a few minutes).
  4. Add honey and balsamic vinegar and bring to a simmer. Done!
