Blueberry (or Plain) Waffles
Ingredients
- 1¾ cups all purpose flour
- 1 tablespoon baking powder
- 1¾ cups milk
- 2 egg yolks
- ½ cup vegetable oil
- 2 egg whites
- about 1 cup blueberries
- Sift together flour and baking powder.
- Mix milk, yolks and oil together well in separate bowl.
- In another bowl, whip egg whites until they hold their shape.
- Stir wet ingredients into the flour mixture - do not over mix.
- Fold egg whites into the batter. You can add the blueberries into the batter, but I like to add them as shown in the video to help prevent them from sticking to the waffle plates.
- Make the waffles in a preheated waffle iron as shown in video. Waffles amy be cooled on a rack and frozen for later use.
- Enjoy with plenty of maple syrup!
